Tuesdays and Wednesdays are my most difficult days of the week. My husband goes to school directly from work and doesn’t come home from until 8PM. My typical schedule is that when he gets home from work he takes over with the kids and I cook dinner. On the days that he’s in school that really doesn’t work so I’ve been trying to push myself to make dinner earlier in the day. Today I was really in the mood of some pulled beef so decided to figure out how to make Quick and Easy Pulled Beef Sandwiches.
I found a slab of meat sitting in my freezer, to be honest I have no idea of the cut – just that it was beef. I pulled it out and allowed it to defrost. I’ve never made pulled beef before but decided to go ahead and try it out. When it comes to cooking I prefer creating recipes rather then finding and following them.
I pulled out my crock pot and made supper in the morning. It came out incredible and it was such a pleasure to not have to worry about cooking supper. In fact – being 7/11, once my kids got home I took them all to 7-11 to get free Slurpees (yes, alone with 5 kids, I know, I’m nuts!) Best of all my kids LOVED the pulled beef and we didn’t have enough – I’m going to have to double this recipe next time I make it.
Ok, I’ve teased you enough so here is the recipe! I used ready made BBQ sauce – one day I’ll create my own recipe for that too!

- 2 TBSP olive oil
- 1 onion sliced
- 2 lb slab of Beef
- 1 bottle BBQ Sauce I used Honey Mustard
- 6 bread of choice Roll, Pita or Laffa (I used TJ's Whole Wheat Lavash)
- Arugula or any veggies of choice (optional)
- Humus (optional)

- In a frying pan heat olive oil, add onion slices and saute.
- Smear BBQ sauce over the meat and brown for 5 minutes on each side.
- Transfer meat to Crock Pot, pour in residual onions and sauce from the frying pan.
- Cook on low for 6/7 hours.
- Remove meat and shred with 2 forks.
- Return meat to Crock Pot and either cook on low for another hour or reduce to keep warm until you are ready to eat.
- Smear Hummus on your choice of bread, place meat on top, followed by Arugula or veggies of your choice.
- Eat and Enjoy!
Variation: For my kids I served on top of rice.
All in all, using my crock pot was incredible way to save time and frustration later in the day – I am definitely going to be using it more which means you are going to see more crock pot recipes.
