One of the benefits of being a WAHM mom during the summer, while trying to get healthy, is that I’m able to prepare a hot fresh lunch every day. Ironically it’s also one of the most detrimental things to me watching what I’m eating. I keep telling myself “I’m home, I’ll cook lunch” “I’ll prepare food” but I get so caught up in my work that I forget to eat. Another difficult aspect is finding the time to cook dinner – again I get so caught up in my work that I forget. And when my kids tumble in the door from camp – they are ready to EAT. I’ve been trying to stick to quick and easy meals and one of my favorites is Spaghetti Bolognese. It’s super fast prep and my kids love it.
At one of my recent visits to my nutritionist I relayed how my biggest hurdle at was actually remembering to eat – so that I wouldn’t all of a sudden be starving and just grab what ever is around. Eating regularly is just as important to loosing weight as is portion control and the right foods. During the day – especially when my super active toddler is asleep – my work hours are golden and I don’t like to spend too long cooking my lunch. What I’ve taken to try doing is when I prepare dinner – to make part of the protein – albeit with a small variation so that I could use it as the protein for my lunch in one of the next couple days.
My kids LOVE spaghetti bolognese and I love it too for the ease of prep. I decided to make this for dinner one day and as I was sauteing the meat I thought “hey, this would be delicious in a wrap” and hence was born an amazing lunch. So one pot – double duty.

- 2 tbsp olive oil
- 2 onion sliced
- 1 clove garlic crushed
- 2lb ground beef
- 2 cans tomato sauce
- salt and pepper to taste
- 1 lb spaghetti
- 1 Whole Wheat Wrap
- 1 pickle sliced
- ketchup and mustard

- Heat oil in a pan
- Add sliced onion and saute
- Remove a handful of onions and place on the side
- Add crushed garlic and saute another minute
- Add ground beef and saute
- Add tomato sauce, salt and pepper. Bring to a boil and allow to simmer for about 1/2 hour.
- Prepare spaghetti according to preference, serve bolognese over the spaghetti - Enjoy!
- Remove onions and meat from fridge - place in a pan and warm - either in an oven or microwave.
- Smear ketchup and mustard on wrap - place warmed meat and onions along with sliced pickles.
- Fold the wrap - eat and enjoy!
